Preparation:

- Cook potatoes in salted water
- Peel the cucumber, cut it into pieces, salt
- Halve the cherry tomatoes and put into a large bowl
- Chop up the onion and the chives, add it to the tomatoes together with herb sauce and mix well
- Peel the cooked potatoes, cut into slices and add to the bowl
- Pour off the water from the cucumber pieces and add them to the bowl
- Pour 1 dl of herb vinegar over the salad
- Carefully mix
- Leave to stand for one hour
- Before serving, roast the pumpkin seeds in a frying pan
- Mix part of the roasted seeds into the salad, keep the rest as garnish
- Season the salad with salt, pepper, and/or vinegar if needed, and decorate with pumpkin seeds
